Winter Bowl with Honey Dijon Dressing

 

   Vegetarian (contains honey)

   Gluten free 

   Serves 1

Ingredients

½ cup cooked sweet potato

½ cup cannellini/white beans

1/2 cup arugula

1/4 cup red cabbage, shredded

1/4 cup steamed broccoli

Garnishes: fresh parsley, sunflower seeds,  dried cranberries

Honey Dijon Dressing (makes 8 servings)

1/2 cup extra virgin olive oil

1/2 cup apple cider vinegar

2 tbsp honey

4 tsp Dijon mustard

4 tsp prepared yellow mustard

2 small cloves minced garlic


Directions

Assemble ingredients in bowl

Garnish with fresh parsley, sunflower seeds,  dried cranberries

Toss in 2 tbsp Honey Dijon Dressing
