Mediterranean Bowl with Lemon Tahini Dressing

Ingredients

1/4 cup cooked couscous (naturally contains gluten)

1/2  cup black beans, cooked or canned

3 cherry tomatoes

1/2 cup baby spinach

1/4 yellow pepper

Garnishes: pine nuts, fresh basil, black olives, lemon wedge

 Lemon Tahini Dressing (makes 8 servings)

½ cup tahini paste

½ cup lemon juice

3 tbsp maple syrup

2 tbsp extra virgin olive oil

¾ cup water


Directions

Assemble ingredients in bowl

Garnish with pine nuts, fresh basil, black olives, lemon wedge

Drizzle with 2 tbsp lemon tahini dressing
