1/4 cup shredded cabbage
1/2 cup grated carrot
Add the day of:
3 sprigs fresh dill
2 tbsp sunflower seeds
1/2 cup black beans
1/4 avocado
2 tbsp Lemon Poppy Seed Dressing
Lemon Poppy Seed Dressing (makes 8 servings)
½ cup lemon juice (freshly squeezed)
½ cup extra virgin olive oil
1 tsp Dijon mustard
¼ cup diced red onion
1 tbsp poppy seeds
2 tbsp honey
Combine in blender and keep in airtight jar for up to 7 days
