Ingredients
¼ red onion, roughly chopped
1 cup bell peppers, variety of colors, diced
1 small cucumber, sliced
2 tbsp feta cheese, crumbled
5 Kalamata olives, pitted
½ cup shredded cooked chicken, optional
1 cup fresh romaine, chopped
2 tbsp Feta Garlic Vinaigrette Dressing
Garlic Feta Vinaigrette Dressing (makes 4 servings)
1/4 cup extra virgin olive oil
1/8 cup red wine vinegar
2 garlic cloves, minced
1 tsp oregano, fresh or dried
1 tbsp lemon juice
1 tbsp honey
1 tbsp feta cheese, crumbled
Directions
Layer the salad jar with red onion, bell peppers, cucumbers, feta cheese, kalamata olives, chicken and lettuce.
Place all dressing ingredients in a small jar with a lid, shake until combined, then add 2 tbsp to salad jar.
Shake to disperse the dressing, then enjoy!
