Ingredients
½ cup cooked brown rice
½ cup cooked edamame
1/4 cup diced cucumber
2 tbsp diced red onion
2 cooked carrots, matchstick
For garnish (optional): 1/4 sliced avocado, cashews, sesame seeds, sprouts (alfalfa, bean or broccoli sprouts)
Oriental Sesame Dressing (makes 8 servings)
½ cup sesame oil
½ cup soy sauce (or coconut aminos)
2 tbsp maple syrup
2 tsp sriracha
2 garlic cloves, minced
2 tbsp ginger, grated
Keeps well in air-tight container in fridge for 7 days.
Directions
Assemble ingredients in bowl
Garnish with avocado, cashews, sesame seeds, sprouts
Drizzle with 2 tbsp Oriental Sesame dressing
